#BucketDish – Salmon Ricotta Toast at BimBeriBon

When the owners of Asheville’s Rezaz open an outpost in West Asheville you put it on your #bucketdish. The counter service eatery named BinBeriBon is a homerun, with unbelievable hours for breakfast, lunch, dinner and every coffee/snack/drink in between.

A Ricotta Toast with house smoked salmon, slivered radish, caper and roe is delectable in all the right ways and to boot it’s utterly gluten free. The restaurant is 100% gluten and refined sugar free but if I didn’t tell you, it’d never show on the plate. Even bar offerings stay in concept with beautiful wines by the glass, interesting ciders and cocktails made with no added sugar liquors.

The space is appropriately adorable (the green chairs alone are worth the 55 minute drive) and there’s a parking lot so you can stay and explore West AVL.
