Drive directly to the BullStreet District of Columbia and order this: Brisket Stuffed Mac & Cheese at Bone-In Barbeque.

This was the homerun dish of the former food truck with the cult following and now you can nosh down on it at their brick-and-mortar restaurant right next to the Columbia Fireflies stadium in the fascinating redevelopment of the BullStreet District (it’s really worth seeing the old buildings be brought back to life and much of it is still pre-construction).

Under the direction of Chef Scott Hall, you kinda can’t go wrong with his slice of modern Americana menu including lacquered St. Louis style ribs and bbq nachos built over house kettle chips, but GOOD GAWD don’t skip ordering the Mac. It’s gooey and cheesy nestling stupid good hoisin smacked chopped brisket. And, it’s shareable for 4-6 as an appetizer; it’s a slab of a portion for $15.
