#BucketDish: Mercado will bring a taste of the Yucatán

We’re awaiting the opening of GATHER, Greenville’s outdoor food hall, especially since Sarah and Paul Klaassen of HenDough will anchor the property with four concepts. Yes! We’re excited about chicken & donuts, roman pizza and stacked burgers, but what’s about the secret #4…

It’s called Mercado and it’s a game changer for GVL. Mercado (which simply means “the market”) will offer modern Mexican street food inspired by the Yucatán. Think a fresh use of acid, smoke and habanero vs jalapeno, all very much inspired by the Carribbean.

This is not your typical fusion-Mex that partner Chef Michael Olbrantz (of Vitamina T food truck in Asheville) will bring to Mercado. He’s looking to a menu including items like Cochinita, whole hog marinated in citrus and smoked overnight, and multiple offerings of Micheladas to wash it down. Yep, there’ll be a full bar with lots of interesting libations at Mercado too.

The ever restaurant-hunting Ryan Robertson of SVN Blackstream brought the partnership to GATHER and boy, are we thankful! Can I have my Cazuela now? Guess I’ll (not so patiently) wait to order one at GATHER, when it opens this fall.
